The Perfect Dijon Crusted Lamb Chops Recipe

3 pounds or 2 racks of Lamb Chops
Dry Rub Ingredients
½ cup fresh chop Rosemary
½ cup olive oil (cooking chops)
1 teaspoon of Thyme
1 teaspoon of Black Pepper
1 teaspoon of Sea Salt
½ glove of garlic chopped
8oz Dijon Mustard
Italian Seasoned Bread Crumbs (breading chops)

Wash and trim fat off rack of lamb chops (Do not separate rack of chops). Mix all dry rub ingredients together. Rub dry rub on front and back of rack of chops. Brush Dijon mustard on front and back of chops. Roll rack of lamb chops front and back in Italian bread crumbs.

Preheat oil in large skillet to medium high, place breaded rack of lamb in skillet brown on each side (do not cook completely).

Preheat oven to 325 degrees place rack of lamb in roasting pan in oven. Cook for 30 minutes for medium rare chops and 45 minutes for well done. Remove lamb chops from oven and cut to individual chops. Present chops by stacking them together with bone up.
